Defeated, but not grabbed given changes to those rules.

There’s a sickening crack and a clatter that can only be teeth scattering across the floor as Ser Walgrave goes limp, insensate. It would be several hours before a maester would be able to determine if he would live through the night and several more to decide what kind of life it would be.
Slowly standing Wildfyre points a bloody gauntlet at one of Walgrave’s comrades and barks,
“You there, Westerosi, on behalf of your comrade go and apologize to Lord Gormon, Ser Clarent, and Lady Joanna for his most unseemly behavior towards the young maiden.”
I don’t know who is present, but Daeron is just picking whichever one is most likely to speak Common. I’ll do a Simple Intrigue if necessary.
Consequences of Defeat: Walgrave is now Craven as his vicious taunting and subsequent beating have only magnified his cruel and cowardly traits rather than encouraged him along the path of righteousness.

That would upgrade him to a primary character (mostly means he can take wounds, and maybe some stat upgrades).

Hmm, upgrading him seems like a lot of work and Eldon already has enough primary henchmen. Would another drawback not upgrade him?

No, any drawback would force that (doesn't give him a picture however, he's not special).

I'll go ahead and give him Craven then, that seems a lot more appropriate and interesting than just beating him to death.

Making someone apologize on his behalf appears beyond Daeron's ability.

*He’s trying to make one of them apologize to Lord Gormon/Ser Clarent/Lady Joanna on Ser Walgrave’s behalf if that changes anything*

Nope, nobody's very interested in doing anything for the one starting the brawl where they got their arses kicked.
