One man would be sufficient if he is skilled and lucky enough to sneak upon the knight in question and catch him in his sleep, but if he is to be sufficiently awake to actually hear such words, him being held down by at least two in addition to the one holding the knife might be required, and knights sometimes have squires sharing their tents that needs at least the threat of a blade to the throat to keep quiet.

The Servant gets a pained look on their face when he mentions the possibility of a squire. "And once the deed is done, how will your men get clear silently if there is a squire held at knifepoint? It is my understanding that beating a man's head until he is unconscious is loud, unreliable, and quite possibly fatal."
They purse their lips in frustration for a few moments, before sighing. "If it is necessary, I will cover the cost of a pinch of sweetsleep for the squire. Half before, half after, with the down payment reducing the payment owed on completion should it prove unneeded."
"While I have never had my throat slashed, I was under the impression it did a rather good job at waking someone up very thoroughly, however briefly. Still, your numbers sound reasonable - one to do the deed, two to stop the thrashing, and one to keep the squire quiet."

Squeezing a man's throat might knock him out cold quick enough if one knows how it is done, although the difference between unconsciousness and sleep without end is never assured.

The Servant clearly considers that for a good few moments, before sighing slightly and shaking their head. "'Quick, clean, quiet' is how it should be, so that is how it will be. I will pay the extra to cover the cost of the sweetsleep."
Quietly and discreetly, they begin filling a bag with the required down payment under the table. "Anything else to discuss?"

They nod, finishing off filling the bag, and leaving it beside them, against the wall. Locking eyes briefly, they then glance down at the bag to reveal its location. "A pleasure." They stand, and leave.
Once outside, they spend the best part of an hour walking about, making absolutely sure they're not followed, before heading back.

In the darkness, four men sneak into the Bridges camp, almost not evading detection, but they manage, they are not quiet enough to take Ser Jonothor in his sleep, but before he comes entirely to his senses, there is a hand upon his mouth and arms holding him down, or trying to, he is a strong man and he does not panic but struggles mightily, almost breaking free of their hold, there is no easy slitting of the throat, but wild stabs instead to put down a very resilient beast who might have been just a small slip away from having turned the tables and killed his assailants. The commotion finally alerts the guards, and only one of the assassins escapes their impending appointment with the gallows. There is no escaping such a fate for those who murder their betters. While more expensive and louder than she would like, Laena is pleased enough at the outcome. She can mark the third name off of her list.
Happiness isn't something one considers when bringing justice to the Kingdom. But this she chuckles quietly to herself does put a smile on my face.
